OptiFerm– Efficient Fermentation Technology

A New Approach to Fermentation.

OptiFerm is Ferrum’s advanced fermentation solution designed to significantly improve brewery efficiency through external heat exchange and a 360° mixer system. By replacing conventional cooling jackets with active recirculation, breweries can achieve substantially lower energy consumption, faster process times, and increased fermentation capacity without investing in additional tanks.

Reduced Energy Consumption and Improved Sustainability

The OptiFerm system reduces energy consumption by a minimum of 10% compared to traditional cooling jacket technology. Through highly efficient heat transfer in the external heat exchanger, energy losses are minimized and the overall system efficiency is improved. The solution is also ideally suited for integration with heat pumps, enabling further reductions in total energy consumption and CO₂ emissions.

Faster and More Controlled Fermentation

One of the key advantages of OptiFerm is the significantly faster and more controlled fermentation process. Cooling times are reduced by at least 50%, allowing quicker transitions between process phases. Thanks to continuous and homogeneous yeast suspension combined with uniform temperature distribution throughout the tank, total process time can be reduced by up to 30%.

The rapid temperature response enables breweries to implement advanced and dynamic fermentation profiles while eliminating cold and hot zones inside the fermenter.

Increased Capacity and Productivity

By shortening fermentation time, accelerating diacetyl reduction, and improving cooling efficiency, OptiFerm increases the overall utilization of existing fermentation capacity by up to 30% without requiring additional tanks.

The system also provides complete flexibility regarding batch sizes, enabling full process control for both small and large brews. Furthermore, the efficient yeast suspension makes the system highly suitable for high-gravity brewing applications.

Optimized Yeast Management and Product Quality

OptiFerm improves yeast management and overall product quality by creating stable and controlled process conditions. These conditions enhance yeast health and utilization, potentially reducing yeast consumption per batch.

Optimized yeast extraction decreases the load on centrifuges and filtration systems, while controlled aeration can be integrated directly into the recirculation loop to further optimize fermentation performance.

Production of Low- and Non-Alcoholic Beer

The technology also enables efficient production of low- and non-alcoholic beer. By using specialized yeast strains that only metabolize monosaccharides, breweries can ferment beers with 0.5% and even 0.0% ABV directly in the fermentation process, eliminating the need for expensive dealcoholization equipment.

Production of 0.0% ABV beer requires oxygen injection within the circulation loop.

Lower Investment Costs and Longer Tank Lifetime

OptiFerm offers significant investment and maintenance advantages. Fermentation tanks without cooling jackets are less expensive to manufacture and mechanically simpler in design.

Existing tank farms can increase production capacity without installing new tanks, and damaged tanks with faulty cooling jackets can often be returned to operation using the OptiFerm solution. Since cooling jackets are frequently the first point of mechanical failure, removing them also contributes to extended tank lifetime.

Improved Hygiene, CIP, and Sterilization

From a hygiene and sanitation perspective, tanks without cooling jackets can be heat sterilized — a process typically impossible with traditional jacketed tanks due to thermal stress.

CIP cleaning can be performed directly via the 360° mixer, ensuring complete cleaning coverage while eliminating the need for separate internal CIP equipment. This reduces water, chemical, and cleaning time consumption while improving operational efficiency.

Flexible and Scalable for Modern Breweries

The system is fully scalable and can be implemented in both new and existing brewery installations. In addition to improving operational efficiency and production flexibility, OptiFerm supports sustainable production strategies and helps breweries meet increasing ESG and environmental requirements.
